SOUTHERN BISCUITS 
2 c. flour
1/2 tsp. cream of tartar
1/2 tsp. salt
1 tbsp. sugar
4 tsp. baking powder
1/2 c. shortening
1/2 to 2/3 c. milk
1 egg, unbeaten

Sift flour with cream of tartar, salt, sugar, and baking powder into bowl. Add shortening and blend until consistency of corn meal. Pour milk into flour slowly; add egg and stir to a stiff dough. (In the States you will probably need 1/2 cup milk on the mission field 3/4 if flour is heavy). Knead on lightly floured board five times and roll to 1/2 inch thickness. Cut out with biscuit cutter and bake 10 to 15 minutes at 450 degrees F. Makes 1 dozen.

To make biscuits a little richer and easy to split, roll the dough a little thinner, butter the top of one biscuit and press another one firmly on it. Let rise and bake. You can also use a plain baking powder recipe for these. For the baking powder biscuits, place at once in the oven as they do not need to rise.
