CREAMED HAMBURGER OR CHIPPED
BEEF
 
8 oz. hamburger (if chipped beef, shred well)
3 tbsp. butter
3 tbsp. minced onion
3 tbsp. flour
2 c. milk
1 tbsp. parsley, chopped
1/4 tsp. paprika
2 tbsp. lemon juice

If using hamburger, fry to crisp and drain. Melt butter in saucepan. Saute onions until soft. Add flour and make a paste. Add milk slowly to the flour paste stirring constantly with a wooden spoon until the mixture is thick. Add the hamburger or shredded beef and stir until well blended. Stir in parsley, paprika and lemon juice. Pour over buttered toast or pastry shells. This will keep well in a chafing dish.
