APPLE MIX-IN-THE-PAN 
2 c. chopped apples, not peeled
1 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
3 tbsp. oil
1/4 c. walnuts
2/3 c. sugar
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 c. brewed coffee
1 egg
1 tsp. vanilla

Place chopped apples in 8-inch pie pan. Sprinkle with the sugar. Let stand for 10 minutes. Combine flour, cinnamon, baking powder, baking soda, and salt. Add to apples and toss gently.

Combine coffee, oil, eggs, and vanilla. Stir well. Add to apple mixture in pan. Stir gently until well blended. Stir in nuts. Bake in 350 degree oven for 45 minutes or until a knife inserted in center comes out clean.
