DROP SUGAR COOKIES 
2 eggs
3/4 c. sugar
2/3 c. vegetable oil
1 tsp. grated lemon peel or 1 tsp. lemon juice (if desired)
2 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 400°F.

Mix eggs, sugar, vegetable oil, lemon peel or juice and vanilla thoroughly. Stir in remaining ingredients. Drop dough by teaspoon about 2-inches apart onto ungreased baking sheet. Flatten with greased bottom of glass dipped in sugar.

Bake 8 to 10 minutes.

Yields 4 dozen cookies.

Very good cookies recipe and very quick and easy to make. I made them without the lemon and liked them very much.

Very easy and very quick, I made them with the lemon and my husband and kid loves them. I added sprinkles to them instead of sugar and they still taste great. The only thing I had a problem with was the dough was really crumbly so I added some water to it til it was a much better texture and they came out just fine. I think the issue was due to the altitude.
