FRIED MACARONI 
2 c. dry macaroni
1/2 c. diced onion
1 c. sliced mushrooms
3 tbsp. olive oil
1 tbsp. butter
2 eggs, beaten
salt and pepper to taste

Cook macaroni according to package directions. While pasta is cooking, sauté onions in 2 tablespoons olive oil, until transparent. Add mushrooms; sauté 2 minutes more. Pour in a bowl; set aside. Drain pasta. Add remaining olive oil and butter to sauté pan. Add pasta to hot oil and butter. Fry until pasta is brown. Don't burn. Add onions and mushrooms; stir. Add whipped eggs; stir until eggs are done. Serve hot. Season to taste.
