SUMMER SQUASH RELISH 
8 c. raw, chopped summer squash
4 bell peppers, chopped (red or green)
2 c. chopped onions
2 c. white vinegar
2 c. sugar
2 tsp. mustard seed
2 tsp. celery seed

Mix squash, peppers and onions well. Salt to taste. Let stand 1 hour. Drain. Bring vinegar, sugar, mustard seed and celery seed to boil. Pour over vegetables. Return to boiling. Put in jars and seal. Zucchini may be substituted for some of the summer squash.
