ZUCCHINI BAKE 
1 can cream of chicken or mushroom soup
1/2 c. sour cream
4 c. sliced cooked zucchini
1 c. shredded carrot
1/2 c. chopped onion
2 c. herb seasoned stuffing mix
1/4 c. butter, melted in baking dish

Combine ingredients. Toss stuffing and butter, spoon into vegetable mix. Bake at 350 degrees for 30 minutes.
