AMARETTO CHEESECAKE 
1/2 c. graham cracker crumbs
2 1/2 lbs. cream cheese, softened
3/4 c. granulated sugar
5 eggs
1/4 c. Amaretto liqueur
1 tbsp. orange juice
1 tsp. vanilla
2 tbsp. blanched almonds, finely chopped

Sprinkle graham cracker crumbs on bottom and sides of a well buttered 10" springform pan. Pour out excess crumbs.

In large bowl, beat cream cheese and sugar, add eggs, beating until smooth. blend in the Amaretto liqueur, orange juice and vanilla. Continue to beat until very creamy. Pour into springform pan and place pan inside a larger pan containing 1" of water. Bake in a 350 degree oven for 1 3/4 hours.

Turn off oven and let stand in closed oven for 30 minutes. Allow cake to completely cool before removing sides of springform. Sprinkle top of cake with almonds and refrigerate overnight.
