STRAWBERRY AMARETTO CHEESECAKE 
1/4 c. Amaretto cookie crumbs
24 oz. low-fat cottage cheese
16 oz. cream cheese, softened
3/4 c. sugar
2 tbsp. Amaretto
2 eggs
4 egg whites, room temperature
1/8 tsp. cream of tartar
1/4 c. sugar
3/4 c. strawberry halves
1 tbsp. sugar
2 c. strawberry halves

Preheat oven to 325 degrees. Coat bottom of 10 inch springform pan with nonstick cooking spray. Sprinkle with cookie crumbs. Process cottage cheese and cream cheese to food processor until smooth. Add 3/4 cup sugar, Amaretto and eggs. Process until smooth. Pour into large bowl. Beat egg whites with cream of tartar in mixer bowl until soft peaks form. Add 1/4 cup sugar 1 tablespoonful at a time, beating well after each addition.

Fold into cottage cheese mixture 1/4 at a time. Pour into prepared pan. Bake for 50 minutes. Cool in an for 15 minutes. Chill, covered, for 8 hours. Process 3/4 cup strawberry halves and 1 tablespoon sugar in blender until smooth. Arrange remaining 2 cups strawberries over cheesecake. Drizzle with strawberry glaze. Yield: 14 servings.
