RICE CASSEROLE FROM THE RECIPES
OF GRACE IRVINE
 
1 1/2 c. rice, cooked until almost done, then blanch
4-5 green onions, chopped, along with the tops of 2
1/2 green pepper, chopped
1 c. parsley, cut fine
Pinch thyme
1 lb. Velveeta cheese, grated
2 beaten eggs mixed with 1/2 c. Wesson oil & 1/2 c. milk
Salt, pepper & red pepper to taste

Mix all ingredients and put in a greased casserole. Bake 45 minutes at 325 degrees.
