RICE WITH FISH (INDIAN RECIPE) | |
2 c. yogurt 1 c. finely chopped onion 1/4 tsp. ground cloves 2 tsp. turmeric or curry powder 2 tsp. salt 2 tsp. ground coriander 1/2 tsp. anise 4 slices fish (salmon, sea bass, orange roughy, etc.) 1/2 c. melted butter 3 c. half cooked drained rice 2 thinly sliced tomatoes Combine yogurt, onions, salt, and all spices; marinate the fish 1 hour. Lightly brown the drained fish in 2 tablespoons butter; reserve marinade. Put fish in baking pan; add half the marinade and 2 tablespoons butter. Cover with the rice. Arrange tomatoes over it and add the remaining marinade and melted butter. Cover tightly and bake in a 350 degree oven for 30 minutes. Shake casserole occasionally. Serves 4-6. |
