SPICED APPLE CIDER 
8 c. apple juice
3 c. water
1/2 c. honey
3 cinnamon sticks
6 whole allspice berries or 1/2 tsp. ground allspice
12 cloves
1/2 tsp. ground nutmeg
1 c. lemon juice (I use bottled)
1 orange, sliced

Combine apple juice, water, honey and spices; bring to boil; simmer 30 minutes. Let stand overnight; strain or decant. Add citrus to spiced apple drink; reheat, but don't boil. Makes about 1 gallon.

PINEAPPLE CIDER:

Omit lemon juice and reduce honey to 1/4 to 1/3 cup. Add 2 cups pineapple juice. Proceed as for cider.

CRANBERRY-APPLE WASSAIL:

Omit orange and lemon juice, replacing it with 3 cups cranberry juice. In slow cooker, heat all ingredients at low setting for 5 to 6 hours. Serve drink garnished with fresh slices or orange.
