CHARLESTON RED RICE 
1/2 pkg. bacon
1 med. size onion, chopped
1 lg. bell pepper, chopped
12 oz. can tomato paste
4 c. cooked rice (UNCLE BEN'S®)
Salt and pepper

Fry bacon until crisp in a large 4 quart pot. Remove and drain bacon. Discard extra grease - use only enough to saute bell pepper and onion until tender. Add tomato paste and saute on low for 3-4 minutes. Salt and pepper mixture to taste. Add cooked rice and mix well. Crumble bacon on top just before serving. Serves 6 to 8 people.
