COLD ZUCCHINI SOUP 
2 med. zucchini, scrubbed & sliced
2 med. onions, chopped
2 cans chicken broth
1/2 c. plain yogurt
Freshly ground black pepper
Chopped chives

Combine zucchini, onions and chicken broth in a medium saucepan and heat to boiling. Simmer 15 minutes or until vegetables are tender. Add yogurt and pepper to taste. Puree soup in processor or blender and chill. Garnish with chopped chives before serving. Makes 6 (1 cup) servings.
