COCONUT PIE 
4 eggs, well beaten
1/2 c. self-rising flour
1 3/4 c. sugar
1/2 stick butter, melted
1 tsp. vanilla
2 c. milk
1 c. coconut flakes

Combine all ingredients; mix well. Pour into two 9 inch pie pans. Bake at 325 degrees for 30 minutes or until brown. This pie will make its own crust. Test for doneness with knife. This will make two 9 inch pies or one large, deep dish pie.

A rice pudding maybe made by substituting 1 cup cooked rice for coconut. Cook this until set.
