EASY COCONUT PIE 
1 stick butter
4 eggs
1 3/4 c. sugar
1/2 c. self-rising flour
2 c. coconut
2 c. milk

Melt butter. Cool. Beat eggs well. Add sugar and butter. Mix well. Add flour, coconut and milk, stirring well until mixed. Pour into two 9-inch pie plates. Crust forms during baking.

Bake at 350°F for 35 minutes.

Can also substitute rice and have rice squares. Put in oblong dish.
