VEGETABLE SPOON BREAD 
1 (10 oz.) pkg. chopped spinach, thawed & drained
1 (8 1/2 oz.) cornbread mix
2 eggs, slightly beaten
8 3/4 oz. cream style corn (1/2 can)
1 c. sour cream
1/4 c. butter, melted
1/4 tsp. salt
1/2 c. shredded cheddar cheese

Mix all together except cheese, pour into greased medium roasting pan, 9"x13". Bake at 350 degrees for 30 minutes or until a toothpick comes out clean. Add shredded cheese last 15 minutes.
