CHOOSE A FRUIT OR VEGETABLE
QUICK BREAD
 
1 c. flour
1/2 c. whole wheat flour
1/3 c. quick cooking oats
1 tsp. salt
1/2 c. butter
1/2 c. sugar
2 eggs
2 tbsp. milk
1 tsp. vanilla
1 to 2 tsp. cinnamon
1 c. finely shredded zucchini, carrots, pears or peaches
1/2 c. chopped nuts

Combine first 4 ingredients and set aside. Beat butter until fluffy. Add sugar, eggs, milk, vanilla and cinnamon. Add fruit or vegetables. Add flour mixture, 1/3 at a time until combined. Add nuts.

Bake in 5 1/2 cup ring mold or 8 x 4 x 2 inch loaf pan at 350 degrees for 35 to 40 minutes for ring mold; 55 to 60 minutes for loaf pan, or until they test done.
