FRUIT OR VEGETABLE BREAD | |
1 c. flour 1 tsp. vanilla 1/3 c. quick rolled oats 1 tsp. baking soda 1/2 c. butter 1/2 c. sugar 1/2 c. walnuts, chopped 2 eggs 2 tbsp. milk 1/2 c. wheat flour 1/2 tsp. lemon peel 1 c. finely shredded carrots, peas, zucchini, peaches Combine flours, oats, soda and set aside. In mixer, beat butter, sugar, eggs, milk, vanilla and lemon peel. Stir in vegetable or fruit. Add flour, 1/3 at a time. Stir in walnuts. Spread batter in greased 5 1/2 cup ring mold. Bake at 350 degrees for 35 to 40 minutes. Cover with foil the last 10 minutes of baking. Wrap and store overnight for easier slicing. |
