PEANUT BUTTER BREAKFAST BAR 
1 c. dry oatmeal
2/3 c. dry milk
1/4 c. chunky peanut butter
2 bananas (ripe)
4 tsp. honey
1 tsp. each: baking powder, baking soda & cinnamon
2 tsp. vanilla

Mash bananas and combine all ingredients; mix well. Put in Pam sprayed 8" pan. Bake at 350 degrees for 20 to 25 minutes.

4 servings. 1 serving = 1 bread, 1 fruit, 1 protein, 1 fat, 1/2 milk, 10 opt. cal.

I made this recipe. I am not sure it bakes like a bar. I am going to put it in muffin tins next time unless it hardens up some more. But it tastes great. The kids loved it. There is no sugar and the honey is miminal. I did use homemade smooth peanut butter which might have made it a little mushier. I will try chunky next time but I used what I had.
You could probably add some dried fruit to it too if you wanted, but it was great.

I made these with my kids in mind - a quick & easy breakfast that's also nutritious and filling.

Because of the previous comment, I decided to cook them like large cookies on a jelly roll pan in case. They were perfect! They flattened out just like a regular cookie would, to a nice size with some height. The flavor was very nice. The chew is a little funny because of the oatmeal - next time I might put a little more moisture in the batter and then let it sit in the fridge for an hour before baking, to let the oatmeal soften up a bit.

I will be making these again!

I think adding chocolate chips would be a nice flavor addition, but not for a "breakfast" bar, of course!

These make a great alternative to store-bought power bars. I baked them in muffin tins as per Billie's suggestion and they came out perfectly formed. Only changes I made to recipe were adding a handful of dried cranberries and substituting 1/3 cup of almond meal for half of the powdered milk. Recipe seems to nicely lend itself to personalized variations. Love it.

This recipe is delicious and so easy to make!!! I made mine like a cake and cut into bars. I'm going to do the muffins next time. The first time I made it was as cookies as mentioned. My variation was half almond meal, half mild and 1/4 almond extract with blueberries, I also added 2 tbs of flaxseed meal. And used natural smooth pb. Delicious. I was thinking the next batch I'm going to use 1/3 cup protein powder and 1/3 cup almond meal.
