GLAZED LEMON NUT BREAD | |
4 tsp. butter 3/4 c. sugar 3 to 4 tsp. grated lemon peel 2 c. sifted all purpose flour 2 1/2 tsp. baking powder 1 tsp. salt 1 (4 serving size) vanilla instant pudding mix 1 c. milk 1 c. very coarsely chopped walnuts 2 tsp. lemon juice 2 tbsp. sugar Cream together butter and the 3/4 cup of sugar until light and fluffy. Add eggs and lemon peel. Sift together flour, baking powder, and salt. Add vanilla instant pudding mix. Mix dry ingredients to creamed mixture alternately with milk, beating until smooth after each addition. Stir in walnuts. Pour into greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf dish. Bake at 350 degrees for 50 to 55 minutes or until done. Let cool in pan 10 minutes. Combine lemon juice and sugar, spoon over top. I usually double this glaze. Remove from refrigerator. Wrap well with foil. |
