SHRIMP ARLETTA CASSEROLE 
1 pt. half & half
4 eggs
1 tsp. basil or fresh flakes
2/3 c. flour
1/2 lb. cheddar cheese, grated
1/2 lb. Monterey Jack cheese, sliced or grated
16 oz. can Hunts tomato sauce with herbs/peppers (or add Italian herb chopped green peppers, onions)
1 lb. sm. or med. shrimp

In large bowl beat eggs, add half and half, blend in flour and basil, pinch of salt and pepper. Beat until foamy and well blended. Grease 9 x 13 inch casserole and place shrimp covering bottom. Layer sliced Jack cheese covering shrimp. Pour egg mixture over cheese. Spoon tomato sauce over top and sprinkle cheddar cheese over entire casserole. Bake 1 hour or until cooked in center at preheated oven, 375 degrees. Serves 6.
