SHRIMP CASSEROLE 
1 med. onion, chopped
1 sm. green pepper, chopped
3-4 ribs celery, chopped
1 1/2 to 2 lbs. fresh drained uncooked shrimp
1 c. rice
1 can Rotel tomatoes
1 can cheddar cheese soup
Buttered bread crumbs
1 stick butter

Cook rice seasoned with salt. Saute onion, green pepper, celery and shrimp in butter until shrimp is done, about 15 minutes. Mix cooked rice, shrimp mixture, Rotel and cheese soup together. Put in casserole dish and top with bread crumbs. Bake at 375 degrees until hot and bubbly.
