SCRUMPTIOUS SHRIMP CASSEROLE 
3/4 lb. fresh cooked shrimp
1/2 c. minced onion
1/2 c. chopped green pepper
1 c. cubed Velveeta cheese
1 c. cubed Cheddar cheese
1 c. raw rice
1 c. sliced mushrooms
1/2 to 1 c. sliced ripe olives
1 (no.2) can stewed tomatoes
Salt and pepper to taste

Mix all together except olives and before putting in oven in a 9 x 13 Pyrex dish, add 1 cup of boiling water. Bake in 375 degree oven for one hour covered, then take from oven and decorate with the ripe olives and bake uncovered for 15 minutes.

Will serve 8 at buffet with other foods.
