ARTICHOKE HEARTS 
2 (15 oz.) cans artichoke hearts
1/2 c. minced onion
1/2 clove crushed garlic
2 tbsp. butter
3/4 c. chicken broth
3 tbsp. lemon juice
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. grated lemon rind

Drain artichoke hearts. Saute onions and garlic in butter until tender. Add broth and artichoke hearts. Season with lemon juice, salt, oregano and lemon rind. Simmer 10 minutes. Serves 6.
