CINNAMON CARROT BREAD 
3/4 c. sugar
1/4 c. brown sugar
3/4 c. oil
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 eggs, beaten
1/2 - 3/4 c. nuts
1 c. carrots, grated
1/2 tsp. vanilla

Preheat oven to 350 degrees. Beat together sugars and oil. Sift flour, baking powder, cinnamon in a bowl. Gradually add 2 beaten eggs, carrots and vanilla. Pour in 9"x6" (bread) pan. Bake 1 hour at 350 degrees. Remove from oven and let stand 10 minutes before turning out on rack.
