CHICKEN BREAST ALA ALBA 
2 whole chicken breasts
Flour
4 slices Mozzarella cheese
2 tbsp. butter
4 mushrooms, sliced & sauteed in butter
Salt and pepper

Bone chicken and skin chicken. Place chicken between waxed pepper and pound until thin. Dredge in flour. In skillet, heat butter and add chicken. Cook until tender 5-6 minutes on each side. Remove to shallow pan and sprinkle with salt and pepper. Arrange on each breast slices of mushrooms and cover with cheese. Place under broiler long enough to melt cheese and serve.
