CHICKEN BREASTS ALA GENOA | |
4 chicken breasts, skinned and boned 1/2 c. grated Parmesan cheese 2 eggs, beaten 3/4 c. bread crumbs 1/2 c. oil 1/2 lb. sliced mushrooms 3/4 c. white wine 4 slices Monterey Jack cheese Press chicken in Parmesan cheese to coat; dip in egg, then bread crumbs. Heat oil and brown chicken. Remove and place in baking dish. In same pan saute mushrooms about 5 minutes. Add wine; cook 5 minutes more. Place a piece of Jack cheese on top of each chicken breast and spoon mushrooms over chicken. Add pan juices to baking dish. Bake at 325 degrees for 30 minutes. (A nice dish to serve company.) |
