CARROT APPLE BAKE 
1 tbsp. lemon juice
1 tbsp. brown sugar
1 tsp. ground gingeroot
1/2 tsp. ground cinnamon
1/4 c. water
2 lg. apples, pared, cored and diced
2 c. shredded carrots
3/4 c. oat-bran cereal
1 egg, slightly beaten

Preheat oven to 350 degrees. Lightly oil 9 inch square baking dish. Combine lemon juice, spices and water in large bowl. Add apples, carrots, and cereal. Stir well. Stir in egg. Spoon into prepared baking dish. Bake for 30 to 35 minutes or until carrot is tender.
