CARROT CAKE 
1 1/2 c. salad oil
2 c. sugar
4 eggs
3 c. flour
3 tsp. baking soda
1 tsp. salt
2 1/2 tsp. baking powder
2 jars Jr. carrots (baby food - Gerber)
2 tsp. cinnamon
1 c. walnuts, chopped

Put all ingredients in a bowl. Mix until well blended. Pour into a greased and floured 10 inch tube cake pan and bake at 300 degrees for 45 to 60 minutes depending on your oven. Test with a knife, if it comes out clean, cake is done. Cool and frost with cream cheese frosting if desired or merely sprinkle with confectioners sugar.

FROSTING:

1 (8 oz.) pkg. cream cheese (room temperature)
3 tbsp. butter (room temperature)
1 tsp. lemon extract or vanilla
1/2 box of sifted confectioners sugar

I find I like to use the vanilla extract instead.
