RICE AND BROCCOLI CASSEROLE 
1 pkg. frozen chopped broccoli
1 med. onion, chopped
1 1/2 to 2 cans undiluted cream of chicken soup
1 tbsp. oil
1/2 c. cheese (shredded sharp cheddar or cheese whiz)
1/2 c. milk
1 tsp. salt
1 c. uncooked rice
1 (4 oz.) can sliced mushrooms

Saute onion in oil, add broccoli and cook 5 minutes. Add soup and heat to the boiling point, stirring constantly. Reduce heat and stir in cheese and milk. Add salt and cook 3 minutes until bubbly. Cook rice until fluffy. Mix all and put into a buttered casserole and top with crushed potato chips. Bake at 350 degrees about 20 minutes.
