VERY EASY COCONUT PIE 
1 stick butter
3 eggs
1 tsp. vanilla
3 c. milk
2 pie shells, unbaked
3 c. sugar
1/2 c. flour
1/8 tsp. salt
1 can Angel Flake coconut

Mix all ingredients and pour into unbaked pie shells. Bake at 350 degrees until golden brown.

This was very easy to prepare, but I'm not sure 20 seconds in the blender is right. I think next time I'll mix the dry and wet ingredients separately and whiz them in the blender only 15 seconds.

This pie turned into 3 distinct layers, a thin pie crust on bottom, a nice flan-like custard in the middle, and a coconut crust on top. But everything seemed slightly tough -- I'm not sure if it was overbeaten or over-baked. Next time I might take it out of the oven at 35-40 minutes instead of 45.
