VERY EASY COCONUT PIE | |
1 stick butter 3 eggs 1 tsp. vanilla 3 c. milk 2 pie shells, unbaked 3 c. sugar 1/2 c. flour 1/8 tsp. salt 1 can Angel Flake coconut Mix all ingredients and pour into unbaked pie shells. Bake at 350 degrees until golden brown. |

This pie turned into 3 distinct layers, a thin pie crust on bottom, a nice flan-like custard in the middle, and a coconut crust on top. But everything seemed slightly tough -- I'm not sure if it was overbeaten or over-baked. Next time I might take it out of the oven at 35-40 minutes instead of 45.
