COLD BROCCOLI SALAD 
1 c. shredded Mozzarella cheese, made with skim milk
2 c. plain low-fat yogurt
1/2 c. white vinegar
2 heads broccoli, cut up
2 med. size onions, chopped
1/2 c. light vegetable oil, or you can use olive oil light

Prepare all ingredients. Combine cheese, onions, yogurt, oil, and vinegar. Toss with cut up broccoli. You can use lettuce too. If you like, you light salt and lemon pepper to taste. Refrigerate any leftovers.

You can also put over cold linguini pasta (leave out lettuce).
