COCONUT TART 
3 beaten eggs
1 1/2 c. sugar
1/2 c. butter
4 tsp. lemon juice
1 tsp. vanilla
1 can flaked coconut (3 1/2 oz.)
9" pie shell

Combine eggs, sugar, butter, lemon juice and vanilla. Stir in coconut. Pour into unbaked pie shell. Individual tart shells may be used. Bake at 350 degrees for 40 minutes, or until knife comes out clean.
