GUACAMOLE 
3 ripe avocados (dark skin, soft to touch)
1/2 c. mayonnaise
2 tbsp. lemon juice
1 tsp. salt
1/2 tsp. pepper
1 tbsp. minced onion, soaked in 1/3 c. water
1/2 tomato, chopped
1 tbsp. picante sauce (optional)

Cut avocados in half, discard seed. Scoop avocado out of skin into bowl. Discard skin. Mash avocado with fork. Add mayonnaise and lemon juice; mix with fork until smooth. Mix in salt and pepper. Stir in drained onion and chopped tomato. Add picante sauce if desired.
