SAUSAGE GRITS 
1 lb. pork sausage
3 c. HOT cooked grits
2 1/2 c. (10 oz.) shredded cheddar cheese
3 tbsp. butter
3 eggs
1 1/2 c. milk
Garnish: pimento strips & parsley

Brown and drain sausage. Spoon into greased 13 x 9 x 2 inch baking dish. combine cooked hot grits, cheese and butter. Stir until cheese and butter melt. Combine 3 eggs and milk, then stir into grits. Pour over sausage. Bake at 350 degrees for 1 hour. Garnish.

NOTE: Can be made in advance and refrigerated overnight. Bake next day.
