SUPERBOWL STEAK SKINS
These are a HIT at any Superbowl party!

2 or 3 strip steaks or rib eye steaks (thin slice)
1 bottle steak marinade (optional)
10 potatoes (Russets are good)
1 (8 oz.) bag shredded cheese (I use three cheese blend)
vegetable oil, for deep frying
garlic salt
seasoning salt (Lawry's)
freshly ground pepper
onion and garlic powder, for sprinkling
dairy sour cream, for garnish

Marinate steaks ahead of time (in refrigerator) using your favorite steak marinade, if desired.

Cook steaks medium well.

Meanwhile, boil potatoes (not all the way, should have a firm but soft inside). Let cool then split in half.

With a spoon scoop out inside of potatoes (to make a potato bowl). Heat up oil to fry potatoes (I use a deep fryer) til golden.

Take out and sprinkle with seasonings. Set aside.

Chop up steak into small bite-sized pieces.

To assemble, fill each potato bowl with steak and sprinkle with cheese. Arrange on baking sheet. Place under broiler until cheese is melted.

Serve warm topped with dairy sour cream.

Makes 20.
