APPLE MUFFINS 
1 egg
1/2 c. milk
1/4 c. salad oil
1 c. grated, unpeeled apples
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon

Preheat oven to 400 degrees. Grease muffin tins or use paper liners. Beat egg; stir in oil, milk, apples and cinnamon. Sift together flour, sugar, baking powder and salt; stir into egg mixture just until moist; batter should be lumpy. Fill tins 2/3 full. Sprinkle with topping and bake 25 to 30 minutes.

TOPPING:

1/3 c. brown sugar, packed
1/3 c. chopped pecans
1/2 tsp. cinnamon

Mix together; sprinkle over muffins.
