FRESH APPLE CAKE 
3/4 c. oil
2 c. sugar
3 eggs
3 c. chopped apples
1 c. chopped pecans
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

Cream oil and sugar together. Add eggs one at a time and beat well. Mix dry ingredients and add to above mixture and mix well. Add chopped apple and nuts and mix well. Cook in bundt or tube pan for 50 minutes at 325. Cool 10 minutes and remove from pan.
