SHRIMP AND RICE 
2 lbs. shrimp
12 slices bacon
1 lg. onion
1 med. bell pepper
1 sm. can mushrooms
2 c. rice

Cook rice and set aside. Fry bacon in dutch oven. Chop onion and bell pepper and mushrooms. Add to grease (reserve bacon). Cook a few minutes. Add shrimp (shrimp causes mixture to become watery). Cook until greasy. Add salt, pepper, red pepper, garlic and thyme to taste. Remove from heat. Add rice, crumbled bacon and parsley flakes.
