SHRIMP-RICE SUMMER SALAD | |
1 pound cooked, shrimp (chilled) 2 cups cooked, rice (chilled) 1 tablespoon freshly squeezed lemon juice 3 cloves garlic, finely minced 1/4 cup chopped green onions or shallots 1/4 cup sliced stuffed green olives 1 cup diced raw or steamed cauliflower 1/4 teaspoon coarsely ground black pepper 1/4 cup fat free French Dressing 1/4 cup real mayonnaise (we use one made with olive oil) Cut medium-sized or large shrimp in two or three pieces. (Leave small shrimp whole). Combine all ingredients in large mixing bowl. Refrigerate for at least 30 minutes or up to 5 hours. Serve in scooped-out pineapple halves, or on a bed of baby spinach or Asian salad mix. Season to taste with sea salt, if desired. Makes 4 servings.
