SHRIMP & SCALLOP WITH YELLOW
RICE
 
1 lb Bay Scallops
1/2 lb Large, Extra Large, Jumbo or Colossal Shrimp (Frozen shrimp can be used, but fresh shrimp is best)
3 cups white rice
4 cups water
Goya Sazon (con azafran)
4 Bay Leafs
2 tsp Spanish Olive oil
1/4 tsp black pepper
1/4 tsp salt
1/2 tsp oregano
4 cloves chopped garlic
1/2 diced onion

In a medium saucepan, combine a 1 tsp of Spanish oil, 2 cloves of diced garlic with 1/4 diced onion. Cook till brown, then slowly add the Scallops. Cook for 15-20 min, stirring occasionally. Set aside.

Clean Shrimp as directed. Cut tails. In a large or giant rice steamer, combine 1 tsp of Spanish oil, 2 cloves of minced garlic, 1/4 diced onion, the 4 bay leafs,1/4 tsp of salt, 1/4 tsp of black pepper, the 1/2 tsp of oregano, 2 packages of Sazon Goya, and the tailless, cleaned shrimp.

Pour the 3 cups of rice in followed by the 4 cups of water. Turn on the switch & cover should be done in 30 minutes.

Options:

Can add either fresh diced fish (Snapper, Sea Bass, Grouper) or chopped up Polish Sausage to make it even more enjoyable.
