FETA CHEESE QUICHE 
9-inch pie crust
4 eggs
2 c. half and half
10 oz. frozen spinach or 1 c. fresh
1/2 - 1 c. feta cheese

Make your crust. Sprinkle feta cheese on the bottom. Chop spinach and place on top of cheese. Pour in cream and eggs (spinach will float). Bake at 425 degrees for 15 minutes.

Reduce heat to 300 degrees. Bake for 30 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
