FETA CHEESE SALAD 
3 lg. peppers
1 lg. red pepper
4 lg. tomatoes
2 med. onions
1 lg. Bermuda onion
1 c. black olives (any size)

1. Prepare all ingredients and either cut into strips or cut into rings. Drain and slice olives. Combine all in salad bowl.

2. Prepare dressing as follows:

6 tbsp. good olive oil
3 tbsp. vinegar
3 tbsp. chopped chives
1 tbsp. Dijon mustard
3/4 lb. Feta cheese, crumbled

Beat oil and vinegar, add chives and mustard. Mix all well. Pour mixture over the vegetables in salad bowl. Crumble the Feta cheese and sprinkle on top. Cover and refrigerate until serving. Serves 6.
