PUFFED POTATOES AND SAUSAGE 
1/4 c. sliced green onion with tops
2 tbsp. butter
3 med. potatoes, peeled & cubed (1 lb.)
1 c. shredded American cheese (4 oz.)
3 egg yolks
1/3 c. milk
1/2 tsp. salt
3 stiffly beaten egg whites
1 (8 oz.) pkg. brown & serve sausage links

Cook onion in butter until tender, but not brown. Cook potatoes in boiling, salted water, about 10 minutes. Drain and mash (should have about 2 cups mashed). Beat in cooked onion and cheese. Beat together egg yolks, milk and salt; blend into potato mixture. Fold in beaten egg whites. Turn into a 2 quart casserole. Arrange sausage links over potato mixture. Bake, uncovered at 375 degrees until set, about 45 minutes. Makes 4 or 5 servings.
