SQUASH CASSEROLE | |
1 lb. yellow squash or zucchini 1/2 c. mayonnaise 1 c. bread crumbs 1/4 c. chopped onion 3/4 c. grated cheddar cheese 1/4 c. Parmesan cheese 1/4 c. green pepper 1 egg Salt & pepper to taste Boil squash, zucchini (or both) in salted water; drain well. Mix all ingredients except bread crumbs. Add cooked squash and mix well. Bake in buttered casserole dish at 350 degrees for 20 minutes. Add bread crumbs as topping 5 minutes before done. |
