CREAMED CUCUMBERS | |
4 lb. cucumbers 6 tbsp. white vinegar 2 tbsp. sugar 1 c. sour cream 1/2 env. dehydrated onion soup (uniformly mixed) 1 tsp. salt 2 pinches pepper 1 tbsp. dried shredded parsley Peel cucumbers and slice 1/8" thick. Dissolve sugar in vinegar and marinate cucumber slices in mixture for 1/2 hour in refrigerator. Mix sour cream, dry onion soup mix, salt and pepper; refrigerate. Drain liquid from cucumbers and add enough of it to sour cream mixture to achieve desired consistency. Pour over cucumbers and mix. Sprinkle with parsley before serving. Serves 12. |
