CHINESE CHICKEN SALAD 
3 c. chopped green leaf lettuce
2 c. cubed, cooked chicken
8 oz. sliced water chestnuts, drained
1/2 c. julienned carrots
1/4 c. chopped radicchio
1/4 c. diagonally sliced scallions
5 oz. chow mein noodles

DRESSING:

3 1/2 tbsp. soy sauce
2 tbsp. oil
2 tbsp. rice vinegar
1 tbsp. sugar
1/2 tsp. garlic powder
1/2 tsp. pepper
1/2 tsp. sesame oil

Mix together all vegetables and noodles. Combine dressing ingredients. Pour over salad, serve immediately.
