MICROWAVE MACARONI & CHEESE 
1 c. cooked elbow macaroni
1/4 lb. reg. Velveeta
1/4 lb. mild Mexican Velveeta
3 or 4 tbsp. skim milk
About 12 wheat crackers
2 tbsp. low-fat butter

While macaroni is cooking, cut up cheese in small chunks and crush crackers. Drain macaroni and stir in cheese. Put in microwave safe dish sprayed with Pam (so it won't stick). Add milk, sprinkle crackers over, dot with butter, cook on high 4 minutes.

Fried chicken - fat free, salt free. Skin and remove as much fat as possible from breast or thighs. Wash and drain. Roll in bran flour mixed with seasonings of your choice (garlic powder, Mrs. Dash, lemon and herb, etc.). Brown in non-stick skillet (no fat), turn down and let cook until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
