RICOTTA CAKE 
2 lbs. ricotta cheese
3/4 c. sugar
3 eggs, slightly beaten
1 (18 1/2 oz.) pkg. cake mix with pudding
Powdered sugar

Mix together ricotta cheese, sugar and eggs. Prepare cake mix according to package directions and pour into greased and floured 13 x 9 pan. Carefully spoon ricotta cheese mixture over batter. Bake at 350 degrees for 60 to 65 minutes or until done when tested. Cool on rack. Sprinkle with powdered sugar and serve. Cut into squares, makes 12 servings.
